その信念のもと、料理人であり表現者として、命のリズムを創造的に表現し続けています。
ジャマイカ、ニューヨーク、オーストラリア、日本をはじめとする世界各地での経験を通じて、自然・文化・人とのつながりを軸にした独自の世界観を築いてきました。
ボブ・マーリー＆ザ・ウェイラーズのオリジナルメンバーとのコラボレーションや、音楽を通じたルーツへの探求、そしてガストロノミーの分野での評価など、ジャンルを越えて創造的な活動を展開。その功績が評価され、ジャマイカ大使より「食の外交官（Culinary Diplomat）」の称号を授与され、食を通じた文化交流の担い手として認められています。
ニコール・キッドマン主演のドラマ『ナイン・パーフェクト・ストレンジャー』の制作現場に、スタンドイン・エキストラとしてフルタイムで参加、自身も出演している。撮影期間中はメリッサ・マッカーシーのご家族へ毎週料理を提供し、「食と音楽が心と身体を育む」という信念をより確かなものとしていきました。
2020年にオーストラリア・バイロンベイでスタートした「備長田中」は、現在は静岡県伊東市を拠点に、完全予約制・7席限定のおまかせコースを、プライベート・ダイニングとして限定開催。あわせて、ケータリング、プライベート体験、文化交流のプロデュースなど、食を通じたおもてなしを国内外で展開しています。紀州備長炭と日本の豊かな山海の恵みを軸に、日本の自然と伝統文化を五感で体験する、唯一無二のガストロノミーとウェルネスの世界を創り上げています。
Believing that "to eat is to live," culinary artist Junichi Tanaka expresses life's rhythm through authentic creativity.
Shaped by impactful experiences across Jamaica, New York, Australia, Japan, and beyond, he brings a global perspective rooted in nature, culture, and human connection.
From collaborating with original members of Bob Marley & The Wailers and embracing ancestral ideals through music, to gaining recognition in the world of gastronomy, Junichi has continuously bridged cultures through his creative work. In recognition of his contributions, he was honored by the Jamaican Ambassador with the title of "Culinary Diplomat," acknowledging his role in fostering cultural connection through food.
On the production of Nine Perfect Strangers, starring Nicole Kidman, he served full-time as a stand-in and extra, and also appears on-screen himself. Throughout filming, he prepared weekly meals for Melissa McCarthy's family — an experience that deepened his belief in the power of food and music to nourish both body and soul.
Founded in 2020 in Byron Bay, Australia, BINCHO TANAKA is now based in Ito City, Shizuoka — where its seven-seat, reservation-only omakase course is offered as a private dining series, held on select dates. Alongside the restaurant, JT continues catering, private culinary experiences, and cultural exchange work, sharing Japanese hospitality across Japan and abroad. Grounded in Kishu Binchotan charcoal and Japan's rich seasonal bounty from land and sea, his cuisine offers a one-of-a-kind gastronomy and wellness journey — Japan's nature and cultural traditions, experienced through all five senses.

海外にてコミュニティ運営やイベント企画に携わり、人と文化をつなぐ活動を続けてきました。現在は女将として、訪れる人が自然とつながり、心地よい時間を過ごせる場づくりを大切にしています。

家族Family
2020年にステップファミリーとなり、2人から3人、3人から4人、4人から5人へと、家族が増えていきました。
In 2020 we became a step-family — two became three, three became four, four became five, and our family kept growing.
2024年、高齢になった由美子の両親と同居するために、オーストラリアから日本へ帰国。サザエさん一家のように、2世帯・3世代・7名での同居生活が始まりました。
In 2024, we returned to Japan from Australia to live with Yumiko's aging parents. Two households, three generations, seven people — a multi-generational life under one roof, the way the Sazae-san family lived.
移住先として選んだのは、ジオパークに認定された自然豊かな伊豆、そして国際観光温泉都市・伊東。海、温泉、文化、そして東京からのアクセス。7人それぞれの「好き」が、ちょうどよく融合したこの土地で、マスオさん、いや、JTは今日も車を走らせ、伊豆を拠点に駆け回っています。
We chose to settle in Izu — a UNESCO-recognized Geopark of abundant nature, and the international hot-spring city of Ito. Sea, onsen, culture, and an easy reach from Tokyo. A place where seven people's "loves" come together just right — and where JT (the Masuo-san of our Sazae-san household) is still on the road every day, with Izu as his base.
