Owner Chef / Culinary Diplomat

食と音楽を愛し、世界を旅しながら人とつながり、多様な文化に触れてきた。「日本の文化を未来へ残したい」その想いを原動力に、備長炭と発酵を軸とした炭火割烹「備長田中」を開業。レゲエミュージシャンとしての顔を持つ異色のシェフ。

A chef who loves food and music, shaped by travels across Jamaica, New York, Australia, and Japan. Driven by the wish to carry Japanese culture into the future, he founded BINCHO TANAKA — a charcoal kappo rooted in binchotan and fermentation. Also a reggae musician — a singular path bridging cuisine, culture, and connection.

「一期一会」。ご縁とおもてなしのこころを大切に、オーナーシェフと共に「備長田中」を育んでいる。海外でのコミュニティ運営やイベント企画に携わり、人と文化をつなぐ活動を続けてきた。「和（輪）をもって貴しとなす」を胸に、伊豆から世界へ、文化とおもてなしを届けている。

Guided by "ichigo ichie" — every encounter, once in a lifetime. Cherishing connection and hospitality, she shapes BINCHO TANAKA alongside the Owner Chef. With a background in community-building and event production overseas, she weaves people and cultures together — from Izu out to the world.
